3 Healthy Breakfasts to Start Your Day

For many people, eating a healthy breakfast each morning is essential to staying energised throughout the day. When people don't eat anything for breakfast, their bodies begin to conserve energy and burn fewer calories. To get yourself ready to take on the day, try one of these nutritious breakfasts.

1. Green Fritters
According to BBC Good Food, this green fritters recipe is a popular one because it's quick and easy to make. It also contains a good portion of eggs and green vegetables, which will help to keep you satisfied until lunch and reduce unhealthy cravings. 

Ingredients

  • 140g courgettes, grated
  • 3 medium eggs
  • 85g broccoli florets, finely chopped
  • Small pack dill, roughly chopped
  • 3 Tbsp. gluten-free flour or rice flour
  • 2 Tbsp. sunflower oil, for frying

Directions

Remove any extra moisture from the courgettes by squeezing them between your hands or tipping them onto a clean tea towel and twisting to squeeze out the moisture. Beat the eggs in a bowl and add the broccoli, most of the dill and courgettes. Mix together and stir in flour, combining until thoroughly blended. 

Heat the oil in a nonstick pan. Put a large spoonful of the egg mixture in the pan and add 2 additional spoonfuls. Fry the 3 fritters for 3-4 minutes over medium heat, or until golden brown and solid enough to flip over. Turn them over and leave until brown. Repeat process for each fritter. Top with the remaining dill and serve.

2. Fruit Porridge
There's nothing like waking up to a warm bowl of porridge during the colder Winter months. The NHS recommends adding some fruit to your morning meal for your 5 A Day and to ensure you're consuming the nutrients you need to stay healthy and energised. Try one of these fruit porridges.

Apple Pie Porridge

Ingredients

  • 50g porridge oats
  • 200ml apple juice (with no added sugar)
  • 100ml semi-skimmed milk
  • 1 medium dessert apple, diced
  • 1 pinch cinnamon (optional)

Directions

Put all of the ingredients in a saucepan. Heat and stir until boiling. Lower the heat and simmer for 5 minutes, stirring frequently. Spoon the porridge into a serving bowl and top with a pinch of cinnamon, if preferred.

Mashed Banana and Blueberry Porridge

Ingredients

  • 50g porridge oats
  • Handful dried blueberries
  • 100ml semi-skimmed milk
Treating yourself to a bowl of porridge is a healthy way to start your day.Mashed bananas are a healthy alternative to honey or sugar.  

Directions

Heat ingredients in a microwave for 3-4 minutes, stirring occasionally. When cooked, stir in the mashed bananas and serve. 

3.  Spicy Moroccan Eggs
This spicy dish makes a perfect meal for weekend brunch. It contains plenty of vegetables to pack in the nutrition and flavour. 

Ingredients

  • 2 tsp. rapeseed oil
  • 1 large onion, halved and thinly sliced
  • 3 garlic clove, sliced
  • 1 Tbsp. rose harissa
  • 1 tsp. ground coriander
  • 150ml vegetable stock
  • 400g can chickpea
  • 2 x 400g cans cherry tomatoes
  • 2 courgette, finely diced
  • 200g bag baby spinach
  • 4 Tbsp. chopped coriander
  • 4 large eggs

Directions

Heat the oil in a large frying pan. Fry the onion and garlic for about 8 minutes, stirring occasionally until golden brown. Pour in the harissa and ground coriander, stirring until thoroughly combined. Add the stock and chickpeas, including the liquid. Cover and simmer for 5 minutes. Then mash around 1/3 of the chickpeas to make the stock a little thicker. 

Tip the courgettes and tomatoes into a pan and cook gently for 10 minutes, until the courgettes are tender. Fold in the spinach so that it begins to wilt into the pan. Add the chopped coriander and stir. Make 4 hollows in the mixture and break in the eggs. Cover and cook for 2 minutes. Remove from heat and let stand for 2 minutes before serving.
