It's the time of year for garden parties (weather permitting). These three delicious Summer pie recipes will help to make you the hit of the season!

1. Lemon-Buttermilk Icebox Pie

Southern Living magazine shared this frozen pie recipe – perfect for a warm Summer's day!

Ingredients:

For the pie:

  • 1 14-ounce can sweetened condensed milk
  • 1 Tbsp. lemon zest
  • 1/2 cup lemon juice
  • 3 large egg yolks
  • 1/4 cup buttermilk
  • Digestive biscuits, crumbled and combined with melted butter to form a loose pie shell

For the topping:

  • 2 cups blueberries
  • 1/3 cup sugar
  • 3 Tbsp. water
  • 2 Tbsp. lemon juice
  • 1 Tbsp. lemon zest

Directions:

Start by preparing your pie topping. In a small saucepan, bring 1 cup blueberries, sugar, water, lemon juice and lemon zest to a boil over medium-high heat. Then reduce heat to low, let simmer and stir occasionally for about 10 minutes – the mixture is ready when it reaches a thick consistency. Add remaining blueberries, stir well and let cool completely.

Next, heat your oven to 160 C. In a medium bowl, beat the egg yolks at high speed for about five minutes. Whisk in sweetened condensed milk gradually until fully combined. Then, add buttermilk and mix well. Immediately pour mixture into the pie crust.

Place your pie in the oven and bake for about 25 minutes. Let the pie cool for at least one hour. Then, cover with clingfilm and let set in the freezer for at least four hours. Just before serving, add topping and enjoy!

2. Marilyn Batali's Blackberry Pie

Ingredients:

For the crust:

  • 2 1/2 cups plain flour
  • 3 Tbsp. sugar
  • 1/4 tsp. salt
  • 1 cup vegetable fat (such as Trex) – chilled
  • 5 Tbsp. ice water

For the filling:

  • 2 pints blackberries
  • 1/2 cup sugar
  • 3 Tbsp. plain flour
  • 1 Tbsp. lemon juice
  • 1 Tbsp. unsalted butter – cold, cut into cubes

Directions:

First, heat your oven to 190 C. Then, using a large bowl, whisk the flour, sugar and salt for your crust. Cut vegetable fat into flour mixture until it reaches a coarse, mealy consistency. Pour in ice water and mix until dough is completely moistened. Place dough on a floured surface and knead it into a ball until it comes together. Divide ball in half, flatten into two discs, wrap in clingfilm and chill for an hour in the refrigerator.

After dough is fully chilled, let it sit at room temperature for about 10 minutes. Then, roll one disc to a thin 12-inch round and move to a 9-inch pie plate. Roll out the other disc to an 11-inch round for the top layer. Set aside.

In a medium bowl, mix blackberries, sugar, flour and lemon juice until berries are fully coated. Lightly mash a few berries to extract more flavour. Pour mixture into pie crust, placing butter cubes on top. Then, place top crust over your filling and press the edges together. Cut four slits in the top crust to create vents.

Place your pie in the oven and bake for about an hour and 15 minutes. Let pie cool for at least four hours before serving. Enjoy!

3. Chocolate Cream Pie
If you want to make a delicious, decadent pie but you're pressed for time, this recipe from Food Network requires no baking and will be ready in 10 minutes.

Ingredients:

For the pie:

  • 1 500g pack of softened cream cheese
  • 1/2 cup sugar
  • 1/3 cup cocoa powder
  • 1/3 cup milk
  • 1 tsp. vanilla extract
  • 1 ready-made chocolate-flavoured crust

For the topping:

  • 1 cup double cream
  • 2 Tbsp. sugar
  • Shaved chocolate for garnish

Directions:

In a medium bowl, beat cream cheese, sugar, cocoa powder, milk and vanilla extract until it reaches a fluffy, smooth consistency. Pour into the ready-made chocolate-flavoured crust and smooth evenly. Set aside.

In a small bowl, make your whipped cream topping by beating double cream with sugar until soft peaks form. Spread a generous layer over the chocolate filling and garnish with shaved chocolate. Enjoy immediately or put it in the fridge for a cold treat!
