Everyone loves a chocolate biccie. However, while desserts like these may taste great, they lack the nutrients you need to maintain your health. This is why many people turn to fruit-based treats to complete their meals. Fruit like blueberries and strawberries are packed with antioxidants and vitamins. Try these fruity recipes.

1. Light Sponge Cake with Raspberries
This sponge cake takes only about 30 minutes to prepare and is a tasty addition to any dessert table. 

Ingredients for Cake

  • A few drops of vegetable oil for greasing
  • 8 Tbsp. liquid egg white
  • 125g caster sugar
  • 75g low-fat spread, melted and cooled
  • 1 tsp. vanilla extract
  • 125g plain flour

Ingredients for Filling

  • 150g low fat soft cheese
  • 1/2 tsp. vanilla extract
  • 1 Tbsp. icing sugar, plus a little extra for sprinkling
  • 100g raspberries or sliced strawberries
  • 2 Tbsp. reduced sugar raspberry or strawberry jam

Directions

Preheat the oven to 190°C and use vegetable oil to lightly grease 2x18cm sandwich tins. Line their bases with non-stick baking paper. Whisk the egg white liquid in a large grease-free mixing bowl until it maintains its shape. Whisk the caster sugar until it forms firm peaks. 

Stir in the vanilla extract and slowly add the melted spread, whisking until thoroughly combined. Pour the flour into the bowl and gently fold it in with a large metal spoon. Spoon into the prepared tins and level out the surfaces. Bake until golden and firm, about 10-12 minutes. Remove the baking paper and turn out onto a wire rack to cool. 

Meanwhile, prepare the filling by mixing the vanilla extract, icing sugar and soft cheese together. Spread over the surface of one of the cakes and scatter the raspberries or sliced strawberries on top. On the underside of the second cake, spread the strawberry or raspberry jam. Sandwich the cakes together and serve. 

2. Blackberry Trifle 
For a refreshing dessert, whip up this blackberry trifle for you and your guests. Blackberries are high in antioxidants and vitamin C, so you know you're enjoying a meal that benefits your health.

Ingredients

  • 10 amaretti biscuits, crushed
  • 2 tsp. Grand Marnier, brandy or sherry
  • 200g blackberries
  • 2 x 500ml tubs ready-made vanilla custard
  • 1-2 Tbsp. caster sugar
  • 300ml double cream
  • Toasted flaked almonds, to serve

Directions

Spoon the crushed biscuits into the base of a glass trifle bowl. Drizzle Grand Marnier over the biscuits and top with blackberries. Pour over the custard and chill until cool and ready to serve. Before eating, whisk the caster sugar and Grand Marnier into the double cream until soft peaks form. Spoon on top of the custard and top with a sprinkle of almonds. 

3. Banana and Peanut Butter Ice Cream
There's nothing better than enjoying a dish of ice cream under the sun as the weather begins to warm up. Create your own homemade version that features healthy ingredients without sacrificing sweetness or flavour.

Ingredients

  • 4 ripe banana, chopped into 3cm chunks and frozen
  • 2 Tbsp. almond milk
  • 1 Tbsp. organic peanut butter
  • 1 tsp. ground cinnamon
  • 1 Tbsp. dark chocolate, grated
  • 1 Tbsp. flaked almonds

Directions

Mix the almond milk and frozen bananas together in a blender until the consistency is smooth. Add the cinnamon and peanut butter before blending again. Pour in more cinnamon if preferred. Transfer to a freezer-proof container and chill for about 1 hour. Remove from the freezer and serve with flaked almonds and grated chocolate on top.
