1. Luscious Lemon Bars
This recipe, courtesy of Midwest Living magazine, is a tangy but sweet treat that is sure to please your guests.


For the crust:

  • 2 1/2 cups all-purpose flour
  • 3 Tbsp. sugar
  • 1 cup butter

For the filling:

  • 5 eggs - beaten slightly
  • 2 1/2 cups sugar
  • 1/4 cup all-purpose flour
  • 2 tsp. lemon zest
  • 3 Tbsp. lemon juice
  • 1 tsp. baking powder
  • Powdered sugar for decoration


First, heat your oven to 180C. Then, combine flour and sugar in a large bowl to make the crust. Cut butter into mixture until it forms a crumbled consistency. Press crumb mixture into a baking dish coated in non-stick cooking spray. Bake until golden brown - this should take about 15 minutes. Once finished, set aside.

To make the lemon bar filling, mix the eggs, sugar, flour, baking powder, lemon zest and lemon juice until fully combined. Pour onto crust and bake until the center is set and the edges are light brown - this should take about 20 minutes. Once your bars are finished baking, remove from oven and place on a wire rack to cool. After about 10 minutes, sift powdered sugar on top for the perfect finishing touch. Store in your refrigerator until serving. Enjoy!

2. Apricot Blondies

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • Black pepper
  • 1 bar unsalted butter - softened
  • 3/4 and 2 Tbsp. light brown sugar
  • 2 tsp. vanilla extract
  • 1 egg
  • 1/2 cup dried apricots - chopped
  • 1/2 cup white chocolate chips
  • 1/2 cup roasted almonds - chopped


First, heat your oven to 160C and prepare an 8x8-inch square metal baking pan with butter or non-stick cooking spray.

Then, whisk flour, baking powder, baking soda, salt and pepper in a small bowl. In a separate, large bowl, beat butter, brown sugar and vanilla with a mixer until it reaches a creamy consistency. Beat in the egg until smooth and then lower the speed to add in the apricots, chocolate chips and almonds. Finally, beat in the dry ingredients until fully combined.

Once your batter is finished, use a spatula to scrape it into the pan, making sure it is distributed evenly. Bake your blondies in the lower third of the oven until the top is golden brown and an inserted toothpick comes out clean - this should take about 45 minutes. Let cool completely, then cut into 2-inch squares. Your guests will rave over this sweet treat!

3. Strawberry Cheesecake Bars
Nothing says summertime quite like fresh picked strawberries. It's the perfect opportunity to use the taste with this recipe from food blog Averie Cooks!


  • 1 bar unsalted butter - melted
  • 1 large egg
  • 1 cup light brown sugar - packed
  • 1 Tbsp. vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp. salt
  • 4-ounces cream cheese - softened
  • 1/4 cup granulated sugar
  • 1/3 cup strawberry preserves


First, heat the oven to 180C and prepare an 8x8-inch pan with aluminum foil coated in non-stick cooking spray.

Place butter in a microwave-safe bowl and heat for about 1 minute.

In a large bowl, whisk melted butter, brown sugar and vanilla. About a minute later, add the egg and mix until smooth. Then, stir in the flour and salt until just combined - you want the mixture to reach a coarse consistency. Place in prepared dish and set aside.

In a medium bowl, beat cream cheese and granulated sugar until smooth - this should take about 1 minute. Spread on top of brown sugar and flour mixture until it's evenly coated.

Then, dollop the jam evenly throughout the cream cheese. Using the tip of a knife, spread and swirl the jam to create a beautiful design.

Bake your bars until edges are set - this should take about 20 minutes. Allow bars to cool at least 3 hours before serving. Enjoy!
